One of the best Colombian coffees we've ever had on the island.
Ana Maria Donneys is easily our favorite producer. As a fifth generation coffee grower from the Correal Barrios family in Quindio, Colombia, bringing incredible offerings to the table is in her blood. Ana is one of the founders of the International Women's Coffee Alliance in Colombia and is also a Q-Grader (the sommelier of coffee). She leverages this unique skillset and background to produce some of the most exciting coffees available today.
FINCA LA PALOMA - PRIMITIVO 48H WASHED
A carefully designed process that blends the tradition of her Primitivo washing method with a controlled 48-hour fermentation. The result is a classic and balanced coffee that enhances the most delicate flavors, preserving the essence of its origin with subtle elegance and a clean cup.
It presents a sweet fragrance with notes in the caramel, soft vanilla, and ripe red fruit categories. In the cup, it reveals hints of smooth cocoa and a medium, bright, and balanced citrus acidity.
Creamy medium body with a sweet, fragrant, and lingering aftertaste that reflects the elegance of Primitivo’s traditional washed coffees.
The process combines the tradition of the Primitivo washing method with fermentation in sealed vats without oxygen. The absence of oxygen favors the development of delicate notes of caramel and vanilla, as well as flavors of ripe red and purple fruits.
